Back to our roots! We invited you to the 6th edition of Sons e Sabores with great music, excellent food and wines from Tejo on June 18th in the TUNA of Penedo.This Portuguese-African night presented Mário Laginha and his guest musician Tcheka from the Cape Verde islands, head cook André Magalhães from the restaurant Taberna da Rua das Flores (Lisbon), assisted by students of the professional school Alda Brandão de Vasconcelos (EPAV), Colares, and wines of the Tejo region.
The menu:
Mussel and bean salad “da Terra” (different types of Capeverdian beans, bell pepper, onion, parsley, bacon)
Pastel di Midju (corn and sweet potatoe pie stuffed with tuna)
Bafa de Polvo (octopus)
Fish soup with mandioc and green banana
Vegetable-Djagacida (vegetarian version of a rich dish from the island of Brava with pumpkin, cabbage, big beans, corn, carrots, etc.)
Rolon (Corn couscous with vegetables)
Guisadu di massa di midju (rich chicken stew with sweet potatoe and gnocchis of corn flower, served with white rice)
Feijoada de Feijão Congo (stew with congo beans)
Fidjos di Banana / Filhós de Banana
Canjica com calda de Ananás (dessert made of white corn and pineapple syrup, similar to arroz dôce)
Fruit salad “Lambe os Dedos”
Afterwards started the marvellous concert with Mário Laginha and Tcheka..
All net revenue went exclusively to the village’s association Tuna Euterpe União Penedense. This association was the promoter of the event for any legal purpose. Insider Cooking Portugal was the main organizing company.
